Yes, you can change your company name on your provider profile. Make sure you're logged in to the AppExchange with the credentials for your AppExchange Publishing Organization (APO) before updating the provider profile because only the provider profile associated with the APO is visible to people browsing your listings on the AppExchange. Remember to also change your company name in the salesforce.com partner portal.
